Exotic Fruit Salad with Bavaria blu



  • ¼ l water
  • 30g sugar
  • 30g freshly sliced ginger (or season pineapple with a pinch of ground ginger)
  • vanilla pod pulp
  • 1 clove
  • ½ teaspoon aniseed (or a pinch of ground aniseed)
  • 1 pinch cayenne pepper
  • 1 teaspoon honey
  • 1 kiwi
  • 1 papaya
  • ½ small pineapple
  • ¼ cantaloupe melon
  • 250 g Bavaria blu

Bring the water, sugar and seasoning to the boil and simmer for a few minutes. Stir in the honey and leave to cool. Sieve when ready. Peel the fruit and remove pips and stones were necessary. Place the fruit in a bowl and pour the aromatic sirup over it. Refrigerate covered for at least 3-4 hours. Arrange on soup plates. Remove the rind from the Bavaria blue as you wish, slice into 1 cm cubes and sprinkle onto the fruit salad.
