Info bites: Fat i.d.m.

No doubt every cheese lover has come across the acronym fat i.d.m. or FDM at least once. But does everyone really know what it means? 

FDM stands for “fat content in dry matter”. In fact cheese contains far less fat than the FDM figure. You first have to deduct the water content from the total weight of the cheese to obtain the dry matter. A soft cheese with 60 per cent FDM actually contains only about half the figure stated, i.e. 30% (absolute level). Anyone wanting to can work out the actual (absolute) fat content using the approximate formula below. To do so, multiply the FDM figure as follows: 

for cream cheese: FDM: 2 = absolute fat minus 10
for soft cheese up to 60%: FDM: 2 = absolute fat
for soft cheese over 60%: FDM: 2 = absolute fat plus 5
for semi-soft cheese: FDM: 2 = absolute fat
for sliced cheese: FDM: 2 = absolute fat
for hard cheese: FDM: 2 = absolute fat plus 5
