Curdling

Cheese production starts with the curdling of the milk. Milk protein is prepared for curdling in this process. Liquid (whey) and the solid components (protein, fat and lactose) of the milk are separated from one another. The latter are subsequently used for cheese making. The curdling requires the use of the enzyme rennet or acidification of the milk.
