Pricking

This is the process of pricking the cheese with long stainless steel needles. They make air channels inside the cheese which enable air to find its way in. The technique is used in the production of blue mould cheese. It is the only way in which the blue mould culture can develop in the cheese. The blue vein mould is added to the cheese prior to the curdling process.
