Centrifugation

Milk which is supplied to the dairy is initially placed in a centrifuge (separator). There it is cleaned, and cream is removed. The centrifugal force flings the heavier skimmed milk outwards at up to 6,000 rpm and the lighter cream gathers in the centre.
