Heat treatment

Raw milk is usually heated for a few seconds following delivery (pasteurised) so that any unwanted bacteria are destroyed. Most cheese products are made from pasteurised milk. Cheese legislation requires that the label must clearly state whether the cheese is made from raw milk if it is not made from heated milk. If this is not stated, the cheese must have been made from pasteurised milk.
