Ripening cultures

Ripening cultures are used to enhance flavour in cheese production. During ripening these cultures trigger chemical processes which are responsible for the typical taste, odour and colour of the cheese types. Blue veined cheese (Penicillium roqueforti), white mould (Penicillium candidum) and red cultures are examples of ripening cultures.
