Which wine matches which cheese?
The choice of wine is just as wide as the choice of cheese.
There are limitless criteria which can be used, numerous brochures which provide recommendations - and which do not ultimately match the personal taste.
First of all you need to work out which wines you are particularly fond of. Find out whether you prefer red wine or white wine and whether it should be dry or sweet and how much fruit acid it contains.
Now you can sort your favourite cheeses a little:
- Mild types like cream cheese, soft cheese without additives, mild semi-soft cheese or fresh semi-solid cheese mix well with mild, fruity white wines with a low acid content.
- Soft cheeses with spicy ingredients match well with wines with a natural residual sweetness like Riesling or Pinot Noir.
- Blue mould and blue veined cheese go well with quality-tested wines such as Beerenauslese, Eiswein (wine made from grapes hardened by frost) or Riesling.
- You can try semi-hard cheese which has been ripened for a longer period and hard cheese with a Pinot Noir, Dornfelder or Regent wine.
