Roast Pork wrapped in Bacon with Blue Cheese Gratiné and String Beans



  • 8 pork medallions
  • 8 slices bacon
  • 350 g string beans
  • clarified butter
  • 100 g Bergader BLU
  • salt and pepper

Step 1
Clean and trim the pork filet removing skin and fat, and slice into medallions. Wrap in bacon and season with salt and pepper.

Step 2
Heat the clarified butter in a pan and brown the meat well in the butter. Roast in the oven for approx. 8 minutes at 175°C .

Step 3
Slice the cheese into approx. 1.5 cm thick slices and cover the pork medallions with the cheese approx. 2 minutes before the 8 minute roasting time is over.

Step 4
Blanch the spring beans in salted boiling water until firm to the bite and refresh with cold water. Melt the butter in a pan, add the beans, season with salt, pepper and savory and heat. Arrange the pork filets on plates and serve with the beans.
