Easy summer meal with Bavaria blu


for 4 persons
  • 200 g Bavaria rich & creamy)
  • 1 yellow courgette
  • 2 green courgettes
  • 2 large carrots
  • 3 tbsp olive oil
  • 4 medium organic eggs
  • 500 ml Bergader milk 1.5 %
  • 10 g cornflour
  • 1 shallot
  • ½ garlic clove
  • ½ bunch of basil
  • ½ bunch of parsley
  • ½ bunch of mint
  • Zest of half a lime
  • 2 tbsp coloured cress or shoots
  • 1 tbsp toasted sunflower seeds
  • Salt, pepper, honey



For the sauce, sweat the shallots and garlic in olive oil. Add the milk and bring to the boil before seasoning to taste with salt, pepper, lime zest and honey. Then add the herbs, quickly stir everything together and thicken with cornflour. Peel the courgettes and carrots into fine ribbons using a peeler. Briefly sweat the vegetable ribbons in olive oil, season with salt and mix with the sauce. Poach the eggs in boiling water with a little salt and a splash of vinegar. Then serve a poached egg and the sliced Bavaria blu over the vegetables. Garnish with cress and sunflower seeds.
