Chestnut pizza

Ingredients

for 4 persons

Base

  • 350 g plain/all-purpose flour
  • 150 g rye flour
  • 4 g yeast
  • 300 ml lukewarm water
  • pinch of salt
  • pinch of sugar

Topping

  • 200 g Bergader Edelpilz
  • 200 g crème fraîche
  • 200 g sour cream
  • 8 fresh figs
  • 300 g grapes
  • 200 g chestnuts, peeled and roasted
  • 150 g roughly chopped walnuts
  • white chocolate shavings
  • fresh mint leaves

 

 

Instructions

Preparation
Add all the ingredients for the base into a bowl and knead well for at least 5 minutes. Leave the dough to prove for about 30 min. Then divide into 4 portions and roll out. Pre-bake the pizzas without any topping for 8–10 min. at 220 °C. Mix together the sour cream and crème fraîche, spread over the pre-baked pizzas and add the nuts, chestnuts, figs and grapes for the topping. Put the finished pizzas back in the oven until they are golden brown. Sprinkle over the Bergader Edelpilz cheese, some white chocolate shavings and fresh mint leaves, and enjoy.
